Description: Jessica Burke is the 22 year old (as of the spring of 2019) daughter of Mastersmith Bill Burke. In the last few years, Jessica has been making knives under the watchful supervision of Bill. The results have been absolutely amazing!
Sujihiki are slicing/carving knives that are well suited for slicing and portioning meats and fish due to the thin, long blade. Extremely sharp, they are also well suited to preparing sushi and sashimi. The long blade allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The blade is forged from 52100 carbon steel and features a hand rubbed satin finish. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make a modern knives. Because this knife is made from carbon steel, it needs to be oiled and dried before being put away. Though this does require a slight change in habits, many chefs feel this is well worth the performance improvement. Because the blade is made from carbon steel, we recommend using camellia oil to oil both the blade and natural wood handle. Jessica's mark can be seen on the left side of the blade. The spine and choil have been nicely rounded for comfort.
The handle is made from stabilized juniper burl set to the full tang using 3 pins. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. The knife has perfect balance and feels exceptional in the hand. Soldered stainless steel bolsters and the ricasso of the blade have been hand stippled as an elegant way to provide a comfortable, secure pinch grip.
