Description: David Tuthill has been a blacksmith for many years, creating elegant ornamental work. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create truly world class chef's knives.
You can think of a paring knife as a smaller version of a chef's knife because, like the chef's knife,paring knives are quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade was hand forged from David's own damascus, combining 1080 and 15N20 carbon steels along with hints of nickel for high contrast. The damascus pattern is a mixture of bold and detail, such that the blade is interesting both up close and from a distance. The deeply etched damascus will facilitate better food release. The spine has been nicely rounded to accommodate a comfortable pinch grip. This knife is light and nimble.
The ambidextrous traditional half octagonal handle is octagonal at the top and rounded at the base. This shape is among the most comfortable of Japanese handle styles. The handle combines black and red dyed beefwood with a red fiber spacer.
