Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restauraunts, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
This knife is a perfect compromise between a chef and a utility knife. It will easily perform a multitude of tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. The blade is just tall enough to give plenty of finger clearance over a cutting board.
The damascus blade is forged from 1084 and 15n20 carbon steels to provide a long lasting edge. The damascus pattern is extremely engaging with lots of movement in the steel. The spine and choil are softened to provide a comfortable grip. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels, we recommend camellia oil to oil the blade and natural wood handle.
The ambidextrous Japanese-inspired octagonal handle is formed from Bolivian rosewood (Machaerium villosum). This exotic hardwood has tremendous figure and will hold up well to the demands of a professional kitchen. The handle is finished with an African blackwood ferrule and a brass spacer.
