This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Whether chopping fruits and vegetables, or slicing meats, this chef's knife will do it all.
The 7-1/2 inch damascus blade is made from 125 layers of alternating 1095 and 15n20 carbon steels providing the excellent edge retention and chip resistance that a high performance knife needs. The spine and choil are nicely rounded to accomodate a comfortable pinch grip. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
The handle is formed from stabilized koa (Acacia koa). This durable wood is only found on the Hawaiian islands and is one of the most desired woods used in knifemaking. Spacers are blue dyed fossil coral, G-10 and brass. Fossil coral is created when prehistoric coral is gradually replaced with agate. These spacers help the handle adjust to humidity and temperature changes in the kitchen. This is a knife you won't want to put down!
