This san chef's utility knife is ideal for slicing fruit and vegetables, meats, fish and other detail tasks. You can use this knife in your hand rather than against a cutting board for paring tasks or it can also be used for chopping smaller foods, such as garlic cloves or ginger because of its taller height. The gentle arc of the cutting edge makes it a good choice for the chef that prefers a smaller, easier to maneuver knife. When accurate cuts are needed, you will find yourself constantly reaching for this kitchen utility.
The hand forged blade combines a VToku2 carbon steel core, surrounded by stainless steel. A thin layer of nickel separates the two primary layers, stopping carbon migration and results in a particularly dramatic transition between the layers. The upper portion is forge finished. Because this knife is forged from carbon steel, we recommend using camellia oil to avoid rust and oxidation, though stainless steel sides make care easier.
The ambidextrous Japanese-inspired oval handle combines bocote with a walnut wood ferrule. A red fiber spacer assists the hand to adjust to temperature and humidity changes. Like other knives, this knife should not be put in the dishwasher.
