Description: Mark Mostert is an exceptional bladesmtih from South Africa. He started making knives part time in 2019 and presented his work for the first time at the 2020 Brooklyn Knife Show in Pretoria, South Africa. From the start, damascus caught his eye and he began a never-ending quest for information surrounding damascus and forging. As time went by, he started experimenting and is one of a very small group of bladesmiths in the world capable of making copper san mai. Mostert brings skills that are far beyond the limited number of years that he has been forging. His work is currently significantly underpriced and I look forward to him gaining a significant international reputation.
This integral chef's knife is Mostert's work at its best. Chef's knives are the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. It is sure to be a kitchen favorite. The K-tip design provides a strong, detail-oriented tip.
Mostert began by forging the Turkish Twist pattern damascus blade, combining 1085 and 15N20 carbon steels. Four separate bars of twist damascus are combined to create this Turkish Twist. The dramatic pattern is immediately captivating. The blade features an S-grind. This unique grind is only found in the highest performance knives - it provides a clean slice with effortless food release.
The blade moves into the handle with an integral bolster. Integral bolsters, while fairly common in production knives, are extremely difficult in a custom environment. Creating integral knives takes a particularly talented bladesmith and Mark has shown himself to be up to the task.
The whimsical handle is tremendously comfortable and accomodates many different grips. Dyed and stabilized masur birch is hand contoured to swell at the palm and again at the end of the handle.
This knife is sure to be a kitchen favorite.
