Description: I was tremendously pleased to meet bladesmith Dave Skinner at the 2019 Guild Show of Southern Africa. Dave brings a refined eye and tremendous skill at the forge to his knives.
The Honesuki, which developed in the Kanto region of Japan (greater Tokyo area), is an all-purpose boning knife. It is a strong and sturdy knife, used to cut meat away from the bone, but not a cleaver for cutting through bones. It is ideal for de-boning poultry, seafood and pork. It also makes a great general purpose utility knife with finger clearance under the handle for chopping. This knife is ground equally on both sides and is ambidextrous.
The blade was forged to shape from K460 carbon steel. K460 is Bohler's version of O1 -- a steel which is well known for its long lasting, ultra-sharp, high performance edge. Like other carbon steel knives, it should be dried and oiled after use. The trade-off of slightly more care in exchange for much higher performance is worthwhile to most users.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. The elegant African wild olive handle will hold up beautifully to the high demands of either a professional or home kitchen. A front spacer is formed from black crosscut Micarta. The front of the handle is sealed with a stainless 'bolster'.
