Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The damascus blade is hand forged from 1084 and 15n20 carbon steels to provide a long lasting edge. The high layer count damascus pattern is extremely engaging with lots of movement in the steel. The spine and choil are softened to provide a comfortable grip. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels, we recommend camellia oil to oil the blade and natural wood handle.
The ambidextrous Japanese-inspired octagonal handle is African blackwood. This dense hardwood has tremendous will hold up well to the demands of a professional kitchen. The handle is finished with a buffalo horn ferrule and a nickel silver spacer.
