This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is great slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. From chopping to slicing and mincing, this will be your go-to knife.
The 8-1/2 inch blade features a hand forged VG-10 stainless steel core (hagane). This is surrounded by many layers of high contrast damascus. This time consuming process creates a knife with outstanding edge holding and beauty without the brittleness of many other high performing steels.
The frame-constructed handle is inspired the Japanese ambidextrous octagonal handle. The stabilized elm burl has a dramatic figure with a nice combination of light and dark tones. A black G-10 spacer and nickel silver bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
