This exquisite santoku was kept in a private collection since it was made. It is in brand new condition and by all appearances Michael could have made it yesterday!
Like a western chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The blade is hand forged 52100 carbon steel with a meticulous hand rubbed satin finish. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make modern knives. Michael's mark is on the left side of the blade and his M.S. mark is on the right side of the blade. Both the spine and choil are nicely rounded for comfort. Because this knife is forged from carbon steels, we recommend using camellia oil for the blade and handle.
The bolster is integral to the blade. This technique has superior structural integrity and requires a particularly talented smith to pull off in a custom knife setting.
The handle combines a beautiful section of stabilized lacewood with a box elder burl end cap. The handle is contoured to provide a comfortable, slip-resistant grip. Alternating copper and G-10 spacers finish the handle. This is a knife you won't want to put down - it is sure to become a kitchen favorite.
