This high performance chef's knife is a perfect choice as your goto knife in the kitchen. The 6-1/4" blade is long enough to get most any task done, yet short enough to be easy to control. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade is satin finished 52100 carbon steel. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. Because this knife is made from carbon steel, we recommend using camellia oil to prevent rust and for oiling the natural wood handle.
The coke bottle shaped handle is stabilized curly koa (acacia koa), secured to the full tang for strength and durability. This durable, dramatic wood is only found on the Hawaiian islands and is one of the most desired woods used in knifemaking. The front of the handle is sculpted to accommodate a comfortable pinch grip. The knife feels great in your hand and balances perfectly.
