Description: Michael Rubin of Black Cap Blades makes high performance chef knives in Connecticut. Michael attended culinary school and received his traditional French culinary education and spent his time working in restaurant kitchens. After taking a knifemaking class with Matthew Parkinson at Dragon's Breath Forge, Michael was immediately hooked. Michael always felt one of the most tragically beautiful things about restaurant work is the impermanence of your work. Perfect execution is only that good for mere moments. Knifemaking gave him an avenue of working with his hands and creating something that can last for more than a lifetime and thus Black Cap Blades was formed. The name Black Cap Blades, is a nod to a local favorite foraged berry that has a long standing tradition with Michael's family.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, mincing herbs, or portioning meats, this will be your go-to knife.
The blade is flat ground, distal tapered AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. A hand rubbed satin finish lends a timeless, heirloom quality.
Purple Richlite handle scales are set on the full tang for strength and durability. Black G-10 liners add a nice contrast to the scales. The handle is shaped to accommodate an extremely comfortable pinch grip. This knife balances right at the front of the handle and is an absolute pleasure to hold. This knife is perfect for either the professional chef or home cook. Like other knives, this knife should not be put in the dishwasher.
