Description: Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
The forged san mai blade combines high performing 52100 carbon steel with wrought iron sides. The hammered finish (called tsuchime in Japan) on the wrought iron provides a dimpled surface to help with food release. Like his hunting knives, this chef knife was tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steel, ensures some of the sharpest and most long lasting edges found anywhere.
The handle is African blackwood. (Dalbergia melanoxylon). African blackwood is among the most dense, durable woods in the world and is highly prized for its jet black appearance. The handle is sculpted to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak. The handle is fit to satin finished stainless steel bolsters. The knife has perfect balance and feels exceptional in the hand.
