Description: Based out of Peckham, South London, Blenheim Forge is the workshop of bladesmiths Jon Warshawsky, James Ross-Harris, and Richard Warner. Together, they create hand-forged, high quality kitchen knives that will be equally appreciated by the avid at-home cook or the professional kitchen. Their understanding of kitchen knives and efficient cutting geometry is excellent! This one-off integral nakiri was handmade in the Blenheim shop.
Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The san mai blade uses a core steel of Blenheim Black. This high quality carbon steel was made specifically to the specifications of Blenheim Forge and is most similar in composition to the coveted Japanese Aogami Super carbon steel. This results in a knife with excellent edge holding and chip resistance! A shinogi grind and textured flats will help greatly with food release. The Blenheim touchmark is on the right side of the blade.
Showing tremendous skill at the forge, the bolster is integral to the blade. Though this technique is regularly done in production knives, forging an integral bolster in a custom setting is extremely difficult and shows the maker's skill at its best. This technique allows the weight of the knife to be more center balanced and provides better structural integrity. The diamond shaped bolster is forged to match the shape of the handle.
The Japanese-inspired handle is ancient bog oak. This wood has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. The octagon shaped handle is comfortable and nicely accommodates a pinch grip. This is a knife you won't want to put down!
