Description: David Tuthill has been a blacksmith for many years, creating elegant ornamental ironwork. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create truly world class chef's knives.
Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The 6-1/3 inch blade is forged from David's own Seastorm pattern mosaic damascus, combining 1085, 1080, and 15n20 carbon steels to ensure excellent edge holding and chip resistance. The blade is high contrast, highly detailed, and extremely engaging. The spine and choil are rounded for comfort. David's touchmark is on the right side of the blade.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. The carved bolster accommodates a comfortable pinch grip.
The contoured handle is mesquite burl. Vulcanized paper spacers surround a large wrought iron spacer. The mesquite hardwood will hold up well to the harsh demands of a professional or home kitchen. Like other knives, this knife should not be put in the dishwasher.
