Description: Jeremy Yelle is a 22 year old up-and-coming knifemaker out of Quebec, Canada. His current focus is high performance kitchen knives, bowie knives, and hunting knives. He received his journeyman smith award at Blade Show 2022. His work is exceptional and he is sure to be a maker to keep an eye on. Lately he has been working on some high performance chef's knives and the results are wonderful!
This chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with just enough finger clearance over a cutting board. At 10 inches, this knife is long enough to cut almost any food.
The san mai blade combines a high performance 80CrV2 carbon steel core with damascus sides forged from 1075 and 15n20 carbon steels. The core was etched to a jet black for a dramatic appearance. The spine and choil are rounded for comfort. A distal taper creates an excellent balance in hand. The 2.2 inch tall heel gives plenty of finger clearance over a cutting board. Yelle's touchmark and JS mark are on the left side of the blade. Because this knife is forged from carbon steels, we recommend using camellia oil to protect the blade and natural wood handle.
The handle is Arizona desert ironwood, flame torched to a jet black appearance. Desert ironwood (Olneya tesota) is a rare wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is extremely dense and durable. In fact it is so dense, that if a piece is dropped in water it will sink! The dramatic swirling figure of the wood still comes through the torched finish. The handle is finished with an heirloom fit and textured steel ferrule.
