Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This chef's knife by Dale Miller is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to its versatility. The tall profile provides plenty of finger clearance over a cutting board -- even for those with larger hands. Whether slicing, chopping or dicing, this chef's knife is sure to be a favorite in your kitchen!
The blade features a fiver layer construction. A central core of high performing 26C3 carbon steel is hardened to 65 Hrc. This Uddeholm carbon steel is a high carbon, low alloy steel well suited for fine cutting knives. Sometimes called 'Spicy White', this very clean steel is relatively similar to Hitachi White (Shirogami). The core is surrounded by a layer of pure nickel and 1045 carbon steel cladding, hardened to 56 Hrc. This ensures the extremely hard blade still has good durability. The blade is ground extremely thin and will create fine, high performance cuts.
The handle is rare Tasmanian tiger myrtle wood (Nothofagus cunninghamii) finished with 16 coats of Tru-Oil. The handle is sculpted to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak. The handle is fit to a matching damascus bolster. A red G-10 spacer and Argentium silver spacer will help the natural wood adjust to humidity and temperature changes from the kitchen. We recommend using camellia oil to protect the blade and natural wood handle.
