Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. Miller's attention to detail shines through this elegant kitchen knife. The blade is hand forged from high performance 52100 carbon steel. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 63 Rockwell, ensuring a keen, long lasting edge. A hand rubbed satin finish adds an heirloom quality to the knife. Forge marks along the spine show its histoy of being a hand forged knife. The blade is ground thin with a convex grind at the edge for additional food release. Dale's touchmark is on the left side of the blade.
The handle is stabilized ziricote combining heartwood and sap wood for a dramatic appearance. The wood was buffed with 100 percent carnauba wax which allows the grain pattern and colors to shine through. The handle is sculpted to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak. Moose antler and African blackwood spacers add contrast. Polished brass bolsters finish the handle. We recommend using camellia oil to protect the blade and natural wood handle.
