Description: This utility knife was hand built by Ichiro Hattori. It is a "grail knife" and has not been made for some years. This one has been in a private collection, and is in near new condition. It does not show any marks from use. It is accompanied by its original kiriwood presentation box. The box shows slight wear but is in good condition. Hattori Chef's knives are the height of perfection. They rival the attention to detail paid by the most attentive craftsman.
Ichiro Hattori is known for his uncompromising traditional crafsmanship. Ichiro was born in 1939 of a knifemakers family and began his craft at 18 years old in his father's factory Masahiro. In 1971, Ichiro Hattori started his own business (Hattori Hamono KK) to pursue his interest in sporting knives. Today, he very rarely produces his own handmade knives and they are in tremendous demand. His knives made from Cowry-X stainless damascus are considered one of the most sought after knives anywhere. Ichiro received the Excellent Skilled Craftsman Award from the Seki City Cutlery Association and in 2010 he received the Contemporary Master Craftsman and Outstanding Knife Making Technician from the Government of Japan. Regrettably, over the years, finding Hattori chef's knives is virtually impossible.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade and tang are both distal tapered for a superior sense of balance. The black linen micarta holds up extremely well to the demanding environment of a professional chef's kitchen. The blade, with its intricate, high contrast damascus sides is produced to absolute perfection. The center is created from Cowry X steel, one of the best steels anywhere and is hardened to Rc63-65 (extremely hard!). Cowry X has unfortunately not been made for many years now. The softer damascus sides are visually stunning and supportive of the ultra-hard blade. The result is an extremely long-lasting razor-sharp edge.
