Description: Ian Rogers hand builds each knife one-at-a-time without the use of waterjet or laser cutters. He is one of the very few knifemakers in the world that forges his own stainless damascus in-house. Ian's understanding of chef's knives is exceptional. His knives have a tremendous sense of presence and flow.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Whether chopping, slicing, dicing, or mincing, this will be your go-to knife in the kitchen!
The damascus blade was hand forged from 52100 and 15N20 carbon steels, ensuring excellent edge holding and chip resistance. The blade features thin geometry for high performance slicing and chopping. The spine and choil are rounded for a comfortable pinch grip. Ian's touchmark is on the left side of the blade. A kurouchi forge finish along the spine provides some additional food release.
The ambidextrous handle is a style often called a half-round in Japan. The lower half is rounded for comfort, whereas the top features three facets. Many people, both in Japan and abroad, feel this to be the most comfortable and versatile Japanese handle shape. Curly koa is combined with a ferrule made from stacked sections of Gold Dark Matter FatCarbon and side cut carbon fiber to create an exceptionally beautiful handle. Like other knives, this knife should not be put in the dishwasher.
