Description: This Yanagiba by Journeyman Smith Peter Pruyn of Brothersville Knives is in impressive piece. The yanagi is a traditional Japanese knife used to cut boneless fish fillets for preparation of sushi and sashimi. It is mainly used for a drawing cut. The heel of the knife is placed on the fish and the knife is lightly pressed down, letting the weight of the knife do the work while drawing the blade toward you. Sashimi knives are also excellent for slicing other boneless meats. This knife is designed for right-handed use.
The blade was hand forged, combining a W2 cutting edge (hagane) laminated to an outer layer of 416 stainless steel (jigane). W2 steel imparts a tremendously keen edge that is easy to sharpen. Because W2 is a carbon steel, this knife must be dried after use to avoid rust and oxidation.
The Japanese-inspired handle is Voodoo Resin. Voodoo Resin is the latest in modern knife and gun handle material. The unique, highly exotic handle is a mosaic composition of corrugated honeycomb aluminum with super-strong pearlescent resin.
