Description: Honesuki are Japanese boning/utility knives. Great for boning chicken and red meats but also amazing as a general purpose utility knife! The shape provides finger clearance when working over a cutting board. A gentle rock to the blade makes it a great chopping knife. The thin, detail-oriented tip makes it even capable of detail tasks where a paring knife would otherwise be used. This is an ambidextrous honesuki and is sharpened with a 50/50 grind.
Kasumi knives are forged in Seki Japan, an area with over 800 years of smithing history. The blade is formed by forging folded layers of soft stainless steel (called a Jigane) around a central core formed from VG10 stainless steel. The central core is tempered to 59 - 60 Rc, ensuring an exceptionally keen, long-lasting edge.
The blade is forged quite thin so as to have little or no resistance when cutting through food. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The handle is formed from black resin impregnated hardwood (Paakawood).
