Description: This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
Kasumi knives are forged in Seki Japan, an area with over 800 years of smithing history. The blade is formed by forging folded layers of soft stainless steel (called a Jigane) around a central core formed from VG10 stainless steel. The central core is tempered to 59 - 60 Rc, ensuring an exceptionally keen, long-lasting edge.
The blade is forged quite thin so as to have little or no resistance when cutting through food. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. The handle is formed from black resin impregnated hardwood (Paakawood).
