Description: The nakiri is a traditional Japanese knife shape ideal for chopping fruit and vegetables as well as thin slicing of meats (with no bones). The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
The stunningly beautiful Shun line of kitchen cutlery is forged by Kai in Japan and distributed through Kershaw. The san mai damascus blade reduces sticking and results in less damage to the food being cut and faster prep times. A stainless steel VG-10 center core (Jigane) is clad with 16 layers of SUS410 high-carbon stainless steel on each side. VG-10 "super steel" is composed of carbon, chromium, cobalt, manganese, molybdenum, silicon and vanadium, resulting in a long-lasting, high-performance edge with easy maintenance. 'D' shape Black Pakka wood handles provide beauty and function. The 'D' shape is designed for left handed users and provides maximum comfort and control.
