Description: Miyabi knives blend the tradition of Japanese bladesmithing with the excellence of German engineering. Made in Japan from exclusive German Zwilling formula stainless steel, this 180mm santoku - or chef's knife - combines the sharpness and geometry Japanese knives are famous for with the easy care and durability typical of German blades. A perfect choice for the primary knife in a kitchen. The knife is easy to control while slicing and chopping. At 2 inches in height, there is plenty of finger clearance while working over a cutting board.
The edge is hand-finished with the traditional 3-step Honbazuke method, meaning each blade is honed by an artisan to an angle of between 9.5 and 12 degrees per side. This acute angle in combination with the Honbazuke method results in unbelievable sharpness.
The authentic D-shaped handle made of black linen Micarta has a wood-like appearance and feel, with the durability of synthetic material. The timeless elegance is enhanced by a mosaic pin.
