Description: Over the last couple years, Mastersmith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! This santoku is true to its Japanese counterparts. The santoku is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper and has quickly become the new favorite for chefs in the West.
The 7-1/8 inch blade has a perfect arc for chopping and slicing. The blade is perfectly balanced. Aaron forged the blade to shape from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenching three times. Many thermal cycles and normalizing steps assure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
The traditional d-shape handle combines Honduran rosewood with jet black ebony wood. A front nickel silver 'bolster' seals the handle from water. The resinous woods will hold up well to the heavy demands of either a professional or home kitchen.
The knife is accompanied by a leather sheath formed from premium veg-tanned leather by Wickett & Craig. Excellent fit and finish throughout!
