Description: Journeyman Smith Erik Fritz has been working on chef's knife the last couple years and his latest knives have been amazing!
The 8 inch blade was hand forged from Erik's own twisted Ws pattern damascus. The pattern is immediately engaging. It is nicely distal tapered for optimal balance. A differential heat treatment ensures a keen, long lasting edge with strength and durability for the spine. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is not one that you'll want to put down.
The handle is formed from stabilized Hawaiian curly koa. The warm toned wood has been nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the beak. By using stabilized wood, Erik combines the natural beauty of wood with tremendous strength and durability.
