Description: The Kumagoro Blue 3-1/4 inch Paring Knife is a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
Kumagoro Blue Carbon Steel knives feature a premium blue #2 (aogami 2) carbon steel core. This is surrounded by protective SUS410 stainless steel. The combination of a high performance carbon steel core and stainless sides provides the superior edge holding and sharpness of carbon steel with easier care. It is hardened to Hrc 63 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resistant edge that is relatively easy to sharpen. While it is much easier to care for this knife than a full carbon steel knife, it still must be hand washed and dried to avoid rusting the core. We recommend using camellia oil to avoid rust.
The blade is exceptionally thin and cuts with virtually no resistance. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods.
A stainless steel bolster separates the blade from the Western style handle. A triple riveted tang runs the full length of the handle for strength and longevity. The comfortable handle is made from Micarta. Micarta holds up exceptionally well to the rigorous demands of a home or commercial kitchen and does not shrink over time.
Kumagoro Blue knives are sure to be a favorite in your kitchen.
