Description: Bill Thomas is a knifemaker out of N. Henderson, Illinois. In this chef's knife, he has shows exquisite skill and understanding of kitchen knives. As of 2017, Bill is 66 years old. He began making knives in his mid 20's. He has completed around 75 knives.
The 7-1/4 inch blade is formed from high performing AEB-L stainless steel and tempered to Rc 60. AEB-L stainless steel is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. Both the blade and tang are distal tapered, ensuring a perfect balance. The spine is nicely rounded so it is extremely comfortable even when used for many hours at a time.
Black G-10 handle scales are nicely domed for a secure, comfortable grip. This knife is equally comfortable in a pinch grip and held back further on the handle. The G10 handle will hold up well to the heavy demands of either a home or professional kitchen.
