Description: Florian Stockinger is an Austrian bladesmith that has been making waves throughout Europe. His understanding of chef's knives is truly exceptional. His skill at the forge is combined with a tremendous sense of design. His work is heavily influenced by Japanese blade shapes and styles.
This 5-3/4 inch chef's knife is a perfect choice for a general purpose knife in the kitchen. At just under 2 inches in height, the knife provides plenty of finger clearance while chopping. The gentle arc of the blade is perfect whether slicing or chopping. It is sure to become a favorite knife for a chef -- whether at home or in a commercial kitchen.
The blade is forged in a style called hon san mai. Layers of carbon steel surround a C105W1 carbon steel core. C105W1 is water hardening tool steel made in Germany. At 1.1-1.3% carbon and .15-2% chromium, it has slight oxidation resistance combined with carbon steel performance. We recommend using camellia oil to avoid oxidation over time. The blade is distal tapered for a perfect balance.
The cocobolo handle is nicely rounded and fills the hand perfectly. Sculpting at the front of the handle supports a comfortable pinch grip.
