Description: Journeyman Smith Bruce Barnett is a Western Australian knifemaker living in the hills of Perth. Bruce is one of the fine Australian makers who is drawing the attention of the knifemaking world to the wealth of knifemaking talent in his country. Bruce's attention to detail and fine design aesthetic is clearly apparent in this elegant and high performing chef's knife.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
Bruce hand forged the blade, combining 52100 carbon steel with 416 stainless steel. This technique, known as san mai in Japan, creates a knife with the performance of ultra-high end carbon steel, with easier care due to the stainless steel sides. Because this knife is forged from carbon steel, it will have exceptional edge holding, but will require some extra care. We recommend using camellia oil to avoid rust. Many knifemakers and knife users feel that 52100 is among the best performing steels currently used in the knife industry. By forging closely to shape, Bruce ensures particularly good crystalline structure. Showing Bruce's skillful work at the forge, the last remains of a hammer blow remains on the right side of the blade.
The handle is formed from presentation grade jarrah wood Eucalyptus marginata. The warm, red-toned wood has a dramatic swirling figure. The handle is nicely contoured to fit comfortably in hand and swells at the center to fill the palm. The scales are secured to the full tang using beautiful copper and stainless mosaic pins.
