Description: You can think of a paring knife as a smaller version of a chef's knife because, like the chef's Knife, the Dragon Fire Apogee paring knife (DRGF-PARI-0350) is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
Japanese knives have always known for their high performing, precision edges. Regretfully, this is often combined with a slightly more delicate blade than their European counterparts. Dragon Fire by Yaxell bridges that gap – combining Japanese styling, sharpness and performance, while bringing European durability. The Dragon Fire Series is made in Japan from American-made nitrogen steel – BDN1N. Yaxell is well known for producing some of the best made knives available today. Handcrafted in Seki City, master craftsmen pay special attention to every knife so that a perfect kitchen knife is made every time.
BD1N nitrogen steel (Hrc 63 - very hard!) combines a razor edge with durability. Hand sharpened to a 16 degree bevel, it creates a high performing precision edge that will last extraordinarily well for years to come. The 50/50 edge is equally good for left and right handed users.
Ergonomically crafted from FDA-approved red/black linen Micarta, the handles are smooth, yet grippy when wet. Micarta holds up beautifully to the high demands of either a home or commercial kitchen. Three stainless steel rivets and a stainless endcap set the handle in place. The end-cap is made of 18/10 stainless steel, which provides outstanding stability and balance.
