Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance sujihiki is well suited for slicing and portioning meats and fish due to the slender, long blade. Extremely sharp, it is also well suited to preparing sushi and sashimi.
Bill began the blade by forging a many layered dragon's breath pattern damascus from carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The blade begins with a hand forged, integral bolster. Creating an integral bolster is extremely difficult on a custom knife and tests the skills of even the best makers. Here, Bill has created the pattern with the burst of dragon's flame starting at the center of the integral bolster, resulting in a blade that is among the most captivating kitchen knives that I have ever seen!
The transition between handle and bolster is highlighted with 24k gold inlays. The handle is formed from extremely rare high Arctic muskox (Ovibos moschatus) horn. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished horn has a unique grain structure that immediately grabs the eye. It is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the end of the handle.
This long, yet nimble knife has perfect balance and feels exceptional in the hand.
