Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
This blade is forged using a hon san mai (three layers) technique. Bill forged 416 stainless steel to the sides of a 52100 carbon steel blade. The result is the exceptional edge holding of carbon steel with significantly easier care. Many knifemakers and users feel that 52100 is among the best, if not the best steel currently used for knifemaking. The transition line between stainless steel and carbon steel is exceptionally dramatic. The distal tapered blade ensures a perfect balance.
The handle is formed from exhibition grade Honduran rosewood (Dalbergia stevensonii). The warm toned wood has tremendous swirling figure -- the scales are among the most beautiful rosewood I have ever seen. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the end of the handle. The scales are set on a full, distal tapered tang for strength and durability.
