Description: The nakiri is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver. Japanese knives have always known for their high performing, precision edges. Regretfully, this is often combined with a slightly more delicate blade than their European counterparts. The Dragon Fire Series is made in Japan from American-made nitrogen steel – BDN1N. Yaxell is well known for producing some of the best made knives available today. BD1N nitrogen steel (Hrc 63 - very hard!) combines a razor edge with durability. Hand sharpened to a 16 degree bevel, it creates a high performing precision edge that will last extraordinarily well for years to come. The 50/50 edge is equally good for left and right handed users.
Ergonomically crafted from FDA-approved red/black linen Micarta, the handles are smooth, yet grippy when wet. Micarta holds up beautifully to the high demands of either a home or commercial kitchen. Three stainless steel rivets and a stainless endcap set the handle in place. The end-cap is made of 18/10 stainless steel, which provides outstanding stability and balance.
