Description: The nakiri is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver. From chopping to slicing, the Dragon Fire Nakiri will make the task a breeze. Once you try the Dragon Fire Apogee Nakiri, you'll wonder what you ever did without it.
Japanese knives have always known for their high performing, precision edges. Regretfully, this is often combined with a slightly more delicate blade than their European counterparts. Dragon Fire by Yaxell bridges that gap – combining Japanese styling, sharpness and performance, while bringing European durability. The Dragon Fire Series is made in Japan from American-made nitrogen steel – BDN1N. Yaxell is well known for producing some of the best made knives available today. Handcrafted in Seki City, master craftsmen pay special attention to every knife so that a perfect kitchen knife is made every time.
BD1N nitrogen steel (Hrc 63 - very hard!) combines a razor edge with durability. Hand sharpened to a 16 degree bevel, it creates a high performing precision edge that will last extraordinarily well for years to come. The 50/50 edge is equally good for left and right handed users.
Ergonomically crafted from FDA-approved red/black linen Micarta, the handles are smooth, yet grippy when wet. Micarta holds up beautifully to the high demands of either a home or commercial kitchen. Three stainless steel rivets and a stainless endcap set the handle in place. The end-cap is made of 18/10 stainless steel, which provides outstanding stability and balance.
Lifetime warranty.
