This is the place to start your carbon steel knife collection. This chef's utility knife is likely to become a primary knife used in your kitchen. It is small enough to be used as a paring knife -- performing detailed cuts in the kitchen -- yet it is deep enough to be used as a small chef's knife -- slicing, chopping, and mincing. Whether taking eyes out of potatoes or mincing shallots, this knife will become a 'goto' knife. Once you try one of Edson's custom culinary knives, you'll wonder what you ever did without it.
Joe began by creating a bar of san mai damascus steel. Hitachi Shirogami 2 (white steel) steel is tremendously high performing, with an extremely keen edge. 22 layers of carbon steel damascus surround the white steel core. The top of the blade is forge finished. It is flat ground nice and thin behind the edge, providing great food release and clean slicing.
The handle combines stabilized curly koa (Acacia koa) with African blackwood (Dalbergia melanoxylon). The exhibition grade curly koa has a tight curl and exceptional chatoyancy. The dark toned African blackwood provides a nice contrast. Blue and black spacers assist the handle to adjust to temperature and humidity changes in the kitchen. The handle is inspired by traditional Japanese handles. The top features three facets while the lower section is nicely rounded. It provides an ambidextrous, secure, and comfortable grip. This knife is so comfortable, you won't want to put this one down.
